Perfect cookie profile
With dark chocolate and pecan nuts… I say NO to raisins!
With addition of coconut oil to keep them fresh and soft for longer…
Deliciously crunchy on the outside and soft on the inside… perfect combination ❤
Quick and really easy to prepare… Let’s do it then 🙂
Ingredients (approx. 20 small cookies)
1.5 cups spelt flour
2 cups oats
1 teaspoon baking soda
¼ teaspoon salt
1 teaspoon cinnamon
½ cup melted coconut oil
5 tablespoons Stevia
2 large eggs
½ teaspoons of vanilla extract
1 cup chopped pecan nuts
100g of chopped dark chocolate
In one bowl, mix four, oats, baking soda, cinnamon and salt.
In another bowl, mix melted coconut butter with Stevia, then add 2 eggs and mix until it is smooth.
Add dry ingredients to wet ingredients and combine thoroughly.
Add chopped nuts and chocolate, and mix with spatula.
Line baking tray with baking paper.
Preheat oven to 180 C.
Using a tablespoon portion the dough and roll into 20 smooth balls. Then place them on baking tray and flatten them a bit.
Bake cookies for approx. 10 min.
Remove from the oven and leave for few minutes to cool down.
