Healthy recipe for the weekend: Go nuts for banana loaf

This is an easy recipe, just perfect to do on lazy weekend. It makes super tasty breakfast or snack and it’s a great way to get rid of overripe bananas.

Dry ingredients:

1 cup buckwheat flour

2 tbsp ground nuts

1 pinch of salt

2/3 tsp baking soda

2/3 tsp baking powder

1 tsp cinnamon

1/2 cup Xylitol, sweetener or sugar

50 g grated dark chocolate

1/3 cup chopped nuts

Wet ingredients:

1 egg

1/4 cup milk (I used oat milk)

1/4 cup oil (I used rapeseed oil)

2 medium overripe bananas

Method:

In a bowl combine all dry ingredients. Bananas blend together with the milk, oil and egg. Then, add wet ingredients to dry and mix well with spoon or spatula.  Pour batter into small loaf tin – approx. 11×22 cm. You can sprinkle with almond flakes, chopped walnuts or pecan nuts. Bake approx. 45 minutes at 180 degrees.
