I’m so yummy: Baked Beetroot Salad

Beetroot is healthy, versatile and delicious red vegetable. It is a good source of iron, folic acid, potassium and magnesium. It can help lower blood pressure, boost exercise performance and prevent dementia. There are many beetroot recipes from savoury to sweet. Today I want to share recipe for Baked Beetroot Salad.

Ingredients:

250g cooked beetroot vacuum packed

70g rocket salad

180g goat cheese

1 handful of mix seeds

glaze with balsamic vinegar

Vinaigrette dressing:

1 tsp mustard

1 tsp olive oil

1 tsp honey

salad spice mix

a bit of water and lemon juice

Method:

Sliced beetroot bake in the oven for approx. 10 – 15 min. Roast seeds on the frying pan or in the oven. Mix all ingredients for the vinaigrette dressing. Lay rocket leaves on big plate and sprinkle with the balsamic vinegar glaze. Lay the sliced beetroot on the plate and alternately place sliced goat cheese. On the top pour vinaigrette dressing and then garnish your salad with roasted mix seeds.
