Breakfast ideas: Avocado & Eggs Three Ways

Avocado facts:
  • fruit with rich, buttery flavour and smooth texture – perfect for salads, sandwiches and smoothies
  • popularly known as alligator pear because of the shape and rough skin
  • a good source of vitamins C, E and B6, potassium, lutein and dietary fibre
  • high in calories
Egg facts:
  • an excellent source of protein, vitamins A, D and the B group, zinc and iron
  • eggs are complete protein food – contain all nine essential amino acids
  • egg yolks are one of the few foods that contain vitamin D, which is normally obtain from sunshine
  • yolks are high in cholesterol
  • a common cause of food allergy

 

Avocado & Egg pâté

Ingredients:

1 ripe avocado

2 hard-boiled eggs

1 tbsp lemon juice

salt and black pepper

Preparation:

Roughly chop eggs and avocado, add lemon juice, salt and pepper. Blend until smooth. Taste and re-season if necessary.

Baked Eggs in Avocado

Ingredients:

2 big ripe avocados, halved and seeded

4 small eggs

salt and pepper

bacon cubes

mix herbs

grated Parmesan cheese

Preparation:

Place avocado halves in muffin pan. Gently crack one egg and spoon it into the avocado hole. Do the same with the remaining avocado halves. Season each filled avocado with mixed herbs, salt and pepper. Top with chopped bacon. Bake in 180 C for about 15 – 20 minutes – until the egg whites have set, but the yolks are still runny. Sprinkle with grated Parmesan cheese and serve hot.

Fried Eggs & Avocado toast

Ingredients:

4 large slices of bread

4 small eggs

1 ripe avocado

salt and pepper

grated cheese

butter to fry

Preparation:

Slice the avocado length-wise to get long and thin pieces. Cut a hole in each bread slice to fit one avocado slice. Melt butter in the frying pan. First, fry one side of bread, then flip it over and place avocado in the hole and an egg in the center. Season with a little salt and pepper. Fry until the bottom of the bread is nicely browned and the egg whites have set, but the yolks are still runny. Repeat with the remaining slices of bread. Sprinkle with grated cheese and serve hot.
