Easter Sunday breakfast

Breakfast on Easter Sunday is quite big deal in Poland. The table is beautifully decorated with white tablecloth and flowers. Among the traditional dishes are ham, sausages, eggs, bread and homemade cakes.

Stuffed eggs

Ingredients:

10 hard-boiled eggs

3 slices of ham

3 tbsp of mayonnaise

spring onion

salt and pepper

Method:

Slice the eggs in half lengthwise, removing yolks to a medium bowl, and placing the whites on a serving platter. Mash the yolks into a fine crumble using a fork. Add mayonnaise, small pieces of ham, salt, and pepper, and mix well. Evenly disperse heaping teaspoons of the yolk mixture into the egg whites. Sprinkle with spring onion and serve.

Ham rolls

Ingredients:

10 big slices of ham

300 g of favourite vegetable-mayo salad

Method:

Lay the ham slices on a flat surface and spread with mayo salad. Roll the ham slices tightly and serve.

Egg-enriched bread

Medium size loaf (approx. 750 g)

Ingredients:

1 egg plus 1 egg yolk

water

500 g strong white bread flour

2 tsp sugar

1 1/2 tsp salt

25 g butter

pouch of dried yeast

Method:

Put eggs in a measuring jar, add water to give 300 ml liquid, mix lightly and pour into the bread machine pan. Sprinkle over the flours, add salt, sugar and butter in separate corners of the pan. Make a small indent in the centre of the flour and add yeast. Set the bread machine to the white basic setting and bake.
