Eating well: My two favourite tomato salads

Simple salads – perfect as starter, snack, light lunch or dinner. It won’t take more than 10 minutes to prepare them. Make sure that you are using fresh ingredients and serve them straightaway.

Classic combination of Tomato & Mozzarella

Ingredients:

2 big tomatoes

Rocket salad

Mozzarella

Olive oil

Salad seasoning

Fresh basil, chives or spring onion to garnish

Method:

Place rocket salad on serving plate, then add tomato slices, alternating with mozzarella slices. Combine olive oil and salad seasoning, drizzle over tomatoes and mozzarella, sprinkle with basil, chives or spring onion.

Cherry Tomatoes & Feta

Ingredients:

Cherry tomatoes

Rocket salad

Feta cheese

Olive oil

Salad seasoning

Fresh basil, chives or spring onion to garnish

Method:

Cut cherry tomatoes in  half or quarters and dice the feta cheese. Place rocket salad on serving plate, then add tomatoes and feta. Combine olive oil and salad seasoning, drizzle over tomatoes and feta, sprinkle with basil, chives or spring onion.
