A member of the cabbage family, kale is an amazing vegetable. It is a good source of beta carotene, vitamin C and B6, folate, calcium and iron. In addition, kale is weight loss friendly food because of the low-calorie and high content of water. There are many different types of kale. The most common type is called curly kale.
Do you want to boost the amount of nutrients you take in? Simply add kale to your diet by serving it with salad, tossing with pasta, adding to scrambled eggs or even making kale chips. One of my favourite way to eat more kale is adding it to my smoothies. Here are two delicious ideas:
1 ripe avocado
250 g kale
1 can peach
agave nectar or honey (to taste)
Combine all ingredients and blend on high until smooth. If needed, add more agave or honey and blend again. Consider adding almond/soya/coconut milk if needed to achieve the correct consistency.
Green Tropical smoothie
pineapple/papaya/mango frozen mix (Aldi)
250 g kale
half can coconut milk
Juice apples and oranges. Combine all ingredients and blend on high until smooth.
