Jelly Good Cake

It is first weekend of summer! Let’s celebrate with no-bake fruit jelly cake 🙂 It is easy to prepare, but you need a bit of patience and time.

Ingredients:

gooseberry jelly powder

orange jelly powder

raspberry jelly powder

Greek style yogurt

biscuits

fruits: grapes, blackberries, strawberries

Method:

Day before: Prep green jelly according to packet directions BUT use 100ml LESS hot water. Use flat box and allow jelly mixture to cool to room temperature. Then place it in the fridge.

Next day: Prep orange jelly according to packet directions BUT use 100ml LESS hot water. Allow jelly mixture to cool to room temperature. Then place it in the fridge and remember to stir from time to time. Meanwhile, place biscuits on round cake tin. Take out green jelly from the box and cut  in small squares. When orange jelly is not too watery, combine with yogurt, add squares of green jelly and pour mixture on biscuits. Place cake in the fridge to set.

Prep raspberry jelly according to packet directions BUT use 100ml LESS hot water. Allow jelly mixture to cool to room temperature. Then place it in the fridge and remember to stir from time to time. Meanwhile, prepare fruits – wash them and cut in slices or halves. Place fruits on cake and slowly pour raspberry jelly. Keep cake in the fridge for one night before serving.
