7 layer salad

If you are looking for light lunch or dinner, you must try my 7 layer salad. It won’t take more than 30 min to prepare and you can even make it the night before! How often can you say that about a salad?

Ingredients:

2 chicken breasts (plus herbs and spices)

Small can of sweetcorn

Pickled cornichons

Small red onion

Romaine lettuce

Mayo, ketchup and yogurt

Method:

Cut chicken breast in cubes, add spices and herbs and fry. Chop red onion, cornichons and lettuce. Don’t mix the ingredients! ONLY combine 4-5 spoons of yogurt with mayo and a bit of ketchup for the dressing. In glass bowl  place: chicken, dressing, red onion, cornichons, sweetcorn, dressing and lettuce. Keep in the fridge.
