6 days left until Christmas! OMG time flies so fast. I spent my first 2 weeks of December on cleaning and decorating flat. We have Christmas window stickers, decorations around the flat and of course Christmas tree ❤
Now it’s time to do some Christmas baking 🙂 Every year I bake these Christmas cookies, cutting the dough out in different shapes every time! They look lovely when you put some icing on them or marzipan with little decorations. Then you can pack them in transparent bags and they are great for gifts 🙂
I took this recipe from “The Contemporary Cake Decorating Bible” by Lindy Smith. This recipe makes one tray of cookies.
75g unsalted butter, diced
1 egg, beaten
275g plain flour, sifted
30 ml golden syrup
1 tsp baking powder
100g caster sugar
1/2 tsp vanilla extract or cinnamon or gingerbread spices
Place dry ingredients into a mixing bowl. Add butter and rub together with your fingertips. Make a hallow in the centre and pour beaten egg and golden syrup. Mix together until you have a ball of dough. Place the dough in a plastic bag and chill in the fridge for 30 min. Roll the dough out on a lightly floured surface to 5 mm thick. Stamp out cookies using Christmas cutters. Lightly knead and re-roll the trimmings together again to use up all the dough. Place cookies on baking sheet and bake for 12-15 min in 170 C until lightly coloured.
