When I was pregnant, I was just crazy about peanut butter and chocolate. I could eat that combination with pancakes, smoothies, brownies, cookies and… yep muffins 🙂 If you like peanut butter (as I do), this is definitely perfect treat for you.
Ingredients for 12 – 15 muffins:
1 and 1/2 cup wheat flour
1/2 cup wholemeal (or spelt) flour
2 tsp baking powder
1/2 tsp salt
2 tbsp unsalted butter, melted
2/3 cup peanut butter
2/3 cup muscovado sugar
2 large eggs
1 cup milk
approx. 3/4 cup of finely chopped chocolate (dark, milk or white)
Make sure that all ingredients are at room temperature. You will need two bowls. One for mixing dry ingredients: flour, baking powder, salt and chocolate. In the second bowl beat butter, peanut butter and sugar. Add eggs one by one. Mix the milk at the end. Put dry ingredients into wet ones and mix briefly. Fill muffin cases two-thirds full and bake for 20-25 mins in 180 C, until risen, firm to the touch and a skewer inserted in the middle comes out clean. Leave the muffins in the tin to cool for a few mins and transfer to a wire rack to cool completely.
